Small-batch bagels, hand-shaped and boiled then baked before sunrise — so when you walk in, the smell hits you first and the menu comes second.
Our Story
Backstage Bagels started with a simple frustration: the bagels in the grocery aisle had nothing to do with the ones we grew up eating. Dense, chewy, properly boiled and baked — that was the standard. Everything else was compromise.
We opened our doors on Army Trail Blvd with flour on our sleeves and a conviction that a bagel shop should taste like a bakery, not a factory. Every dough ball is weighed, hand-shaped, poached in a rolling bath, and slid onto a stone deck. No par-baking. No frozen inventory. No "good enough."
The result is a bagel that cracks when you tear it, chews the way it should, and holds a cream cheese spread the way a proper bagel does. That's not nostalgia. That's technique.
The Process
A bagel is defined by what happens between the dough and the oven. We don't skip any of it.
Every batch is weighed individually. High-hydration dough, malted flour, the right flour blend for chew. Mixed slow, fermented longer than you'd expect.
Each dough ball is pressed, folded, and rolled into a ring. No machines. No consistency from a mold. Each one carries the baker's touch.
A rolling boil sets the crust. This is the step that separates a bagel from a roll — the gelatinized surface becomes glassy, then crackly in the oven.
Stone deck, high heat, until the crust is deep gold and the interior is dense and chewy. Cooled just enough, then sliced and served. That's it.
We bake in batches throughout the day. The best bagels don't wait — and neither should you.
